Yummm! Cream Cheese Salsa

No photo, but this one is delicious!!

Cream Cheese Chipotle Salsa:
Cream Cheese
Chipotle Chiles in can and the juice
Queso

Two bars of cream cheese, heat over low heat to soften. Incorporate the liquid from a medium sized can of chipotle chiles. If you dare, remive the chipotle chiles and chop into small pieces and add to the cheese mixture. You are going for a salmon pink color. Darker red if you like spicy spicy- in that case use all the chipotle chiles in the can. If you prefer mild tasting salsas just use the liquid from the chile can.

After the cream cheese and chipotle liquid is mixed, add a crumbly queso like queso requeson or queso panela/ queso fresco. I suppose goat cheese would be yummy too, if you dont have another white crumbly Mexican cheese handy. Would not use feta or bleu cheese though.

My sister in law made this to cover her version of chicken breast cordon bleu ( made with chicken breast, sliced ham inside and a white cheese). It was delicious!

I may or may not have finished the salsa off with corn tortilla chips ;)
